Villanoble cheese

The Verata and Retina goats from the region of Extremadura, produce this thick aromatic milk, rich in fat, which makes this cheese one of the most typical from the province of Cáceres. It is elaborated using pasteurised goat's milk and rennet. Pressed soft paste. Its rind is cleaned and painted with paprika or olive oil. A cheese rich in fat with an intense and aromatic taste. Maturation for a period of at least 30 days.

Wine pairings: These cheeses can be combined well with young white wines; (Albariño, Rueda, Penedès), and with crianza as well as media crianza red wines as the Ribera del Duero, La Rioja, La Mancha, Jumilla, Alicante, Campo de Borja and wines of Andalusia (Fino, Manzanilla, Oloroso, Amontillados viejos).
