Tupí de Sort cheese
This creamy, unctous paste is made from cured grinded cheese, olive oil and "aiguardent" (strong alcoholic spirit). It is left to ferment for a minimum of one month. Kept in a ceramic cup-like container (tupi), it has a strong dictinctive flavour, deep and pungent, with the subtle aroma of mature cheese and "orujo" (another strong alcoholic spirit typical of northern Spain).
Wine pairings: Light and fresh both white and red wines, fine and manzanillas wines of Andalucia and sweet wines made with Moscatel and Malvasia.
