Peñagorda Semicured Goat Cheese

A mature hard cheese made from goat’s milk from various herds located around the Sierra de Guadarrama. It has a texture reminiscent of the traditional cheeses made by the shepherds themselves, with abundant small eyelets and the characteristic color of goat’s cheese. Upon reaching a state of semi-curation the cheese displays a pleasant and distinctive flavor which continues to develop during the curing process.
