Monje azul cheese

Elaborated in Asturias with raw cow's milk. This cheese has a yellowish cut with green bluish "veins" due to Penicilium. Similar features to Cabrales cheese.

Wine pairings: Natural sweet white wines like Muscat from Andalucía and Alicante (with a little aging, best), Malvasia de Sitges and Canary Islands. Sweet red wines with character as Priorat, Monsant, Empordà
