Don Picón de Cuenca cheese

Elaborated with raw sheep's milk in Castilla La Mancha. Aging in pig fat, it has an intense aroma, a firm texture, which is not very elastic. Spicy aftertaste.

Wine pairings: These cheeses can be combined well with young white wines; (Albariño, Wheel, Penedès), and with crianza as well as media crianza red wines as the Ribera del Duero, La Rioja, La Mancha, Jumilla, Alicante, Campo de Borja and wines of Andalusia (Fino, Manzanilla, Oloroso, Amontillados viejos).
